When you phone is connected to your Mac, in i Tunes, on the Photo page choose "Sync Photos from" i Photo and "All photos, albums, Events...." below like on the attached screenshot. With OSX Snow Leopard I (and earlier i Tunes) was able to select from list of albums - 'Selected albums, Events...' What has changed?
